Bread Fruit
Breadfruit is a nutritious tropical fruit belonging to the Artocarpus altilis species of the Moraceae family. Known for its round to oval shape, textured green skin, and firm, starchy flesh, breadfruit is widely cultivated in tropical regions, particularly throughout the Caribbean, Pacific Islands, and Southeast Asia. Typically harvested while mature but still firm, each fruit generally measures approximately 10–30 cm in diameter and can weigh between 1–4 kg, depending on the variety and growing conditions. When cooked, breadfruit develops a soft, potato-like texture and a mild, slightly nutty flavor, making it ideal for roasting, frying, boiling, baking, soups, stews, and a variety of traditional tropical dishes.

Chef's Tip: Choose mature, firm breadfruit for the best texture and flavor. Peel, remove the core, and boil or steam the breadfruit until tender before mashing it into a smooth consistency. Allow it to cool before incorporating it into the batter. For a richer Caribbean-inspired flavor, use coconut milk and a touch of nutmeg.

Prep Time: 20 minutes Cook Time: 50–60 minutes Servings: 8–10 slices Difficulty: Easy
1. Prepare the Breadfruit: Peel the mature breadfruit, remove the core, and cut the flesh into medium-sized pieces. Boil or steam for approximately 15–20 minutes, or until tender. Drain thoroughly and mash until smooth. Measure 1½ cups and allow it to cool before using.
2. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
3. Mix the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg until evenly combined.
4. Combine the Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, coconut milk, and vanilla extract. Add the cooled mashed breadfruit and mix until smooth and well incorporated.
5. Prepare the Bread Batter: Gradually add the wet ingredients to the dry ingredients, gently folding until just combined. Avoid overmixing to maintain a soft, tender texture.
6. Add Optional Ingredients: If desired, fold in shredded coconut, chopped walnuts, pecans, raisins, or fresh lime zest for additional flavor and texture.
7. Transfer to the Baking Pan: Pour the batter into the prepared loaf pan and spread evenly using a spatula. Gently tap the pan against the countertop to release any large air pockets.
8. Bake Until Golden: Place the loaf pan in the preheated oven and bake for approximately 50–60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover it with aluminum foil.
9. Allow to Cool: Remove the bread from the oven and let it rest in the pan for approximately 10–15 minutes. Carefully transfer it to a wire rack and allow it to cool completely before slicing.
10. Slice and Serve: Cut the bread into even slices using a serrated knife. Serve warm or at room temperature with butter, cream cheese, honey, or your favorite spread.
11. Store Properly: Keep leftover bread in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. For longer storage, wrap individual slices tightly and freeze for up to 2 months.
Chef's Tip: For a moist and flavorful breadfruit loaf, make sure the cooked breadfruit is thoroughly drained before mashing. Excess moisture can make the bread dense or gummy. Adding coconut milk, cinnamon, and nutmeg enhances its naturally mild flavor and creates a delicious Caribbean-inspired bread.
