Green Papaya
Green papaya is an unripe tropical fruit belonging to the Carica papaya species of the Caricaceae family. Known for its smooth green skin, firm pale green to white flesh, crisp texture, and mild, slightly earthy flavor, green papaya is harvested before it reaches full maturity and develops its characteristic sweetness. Each fruit typically measures approximately 15–30 cm in length and 10–15 cm in diameter, depending on the variety and growing conditions. Its crunchy texture and ability to absorb flavors make it ideal for fresh salads, pickling, stir-fries, soups, stews, and a variety of Asian and Caribbean-inspired dishes.

Chef's Tip: Choose a firm, unripe green papaya with pale flesh for the best texture. Shred it into thin strips using a julienne peeler or mandoline. For a more authentic Thai-style salad, lightly pound the garlic, chilies, green beans, and tomatoes before combining them with the papaya to release their flavors.

Prep Time: 20 minutes Cook Time: 5 minutes Servings: 4
1. Prepare the Green Papaya: Wash and peel the green papaya, then cut it in half and remove the seeds. Using a julienne peeler, mandoline, or sharp knife, shred the flesh into thin strips. Place the shredded papaya in a large mixing bowl.
2. Prepare the Vegetables: Wash the cherry tomatoes and slice them in half. Cut the green beans into approximately 2-inch pieces and shred the carrot into thin strips. Set the vegetables aside.
3. Prepare the Dressing: In a small bowl, combine the fresh lime juice, fish sauce, palm sugar or brown sugar, and optional tamarind paste. Stir until the sugar dissolves completely and the ingredients are well blended.
4. Crush the Garlic and Chilies: Using a mortar and pestle, gently pound the garlic cloves and Thai bird's eye chilies until fragrant. Adjust the amount of chili according to your preferred spice level.
5. Add the Green Beans and Tomatoes: Add the green beans and cherry tomatoes to the mortar. Lightly pound them to release their natural juices while maintaining some texture.
6. Combine the Ingredients: Transfer the crushed garlic, chilies, green beans, and tomatoes to the bowl with the shredded green papaya. Add the shredded carrots and optional dried shrimp.
7. Add the Dressing: Pour the prepared dressing over the salad ingredients. Using two large spoons or tongs, gently toss everything together until the vegetables are evenly coated.
8. Adjust the Flavor: Taste the salad and adjust the seasoning as needed. Add more lime juice for acidity, fish sauce for saltiness, sugar for sweetness, or chili for additional heat.
9. Add the Finishing Touches: Sprinkle the roasted peanuts over the salad and gently mix. Garnish with freshly chopped cilantro, toasted sesame seeds, or additional lime wedges if desired.
10. Serve and Enjoy: Transfer the green papaya salad to a serving platter and serve immediately for the freshest flavor and crunch. Pair with grilled chicken, shrimp, sticky rice, or jasmine rice for a delicious, refreshing meal.
Chef's Tip: For the most authentic Thai-style green papaya salad, lightly pound the ingredients rather than simply mixing them. This helps release their natural flavors and allows the dressing to penetrate the shredded papaya. Serve immediately to maintain its signature crisp texture.
