DISCOVERING BABY CORN

Corn dates back to more than 4,000 years and its use throughout different cultures is widely varied, either for the purpose of food, or through the development of derivative products (flour, dyes, oil, biofuels, etc.). The yield of an early harvest of corn can result in small cobs of corn, known as baby corn. Baby corn contains the same properties as traditional corn but is much more tender and sweet and only reaches a size of about 9-10 centimeters. It has become, therefore, a distinguished and unique product.

Baby corn contains only 24 calories per half cup, comparable with that of other vegetables such as broccoli or cauliflower. Baby corn also has virtually no fat, making it an ideal complement to a healthy diet. Baby corn has fewer carbohydrates than traditional corn and offers a high fiber content which is helpful in preventing cardiovascular disease, as well as certain forms of diabetes.

Baby corn is often found canned in the supermarket but it has become increasingly common to eat it fresh. It is used as an ingredient in a variety of recipes or as a garnish in gourmet dishes, so it is common to find it fresh or vacuum-packed in stores.

There are multiple ways to use baby corn in the kitchen, whether as an addition to simple and fresh salads along with other seasonal produce, or for preparing more unusual dishes such as breaded mini ears, a scrambled egg dish cooked with mushrooms and baby corn or cooked with okra.
